Fish, in many varieties, is one of my favorite meats. I love salmon, cod, mackerel, bream, carp, and the list goes on. I like it fried, baked, crispy, flakey, you get it. It is something that I do cook on a regular basis and I really want to share some quick and easy recipes so that you can try them as well.
Starting with mackerel, which I have recently added to our regular set of foods that we cook on a regular basis, this recipe is quite quick, easy to make and you can serve it with so many sides. In my case, I made a cous cous with vegetables on the side, and they worked very well together.

Ingredients:
- 4 small mackerel fillets, with skin
- 5 cloves of garlic
- 20g soft butter
- 1 tsp sweet paprika
- pepperoncini to taste
- salt and pepper to taste
Method:
- If your fish is frozen, thaw it and then make sure to dry it with a paper towel.
- Peel and smash the garlic into a paste.
- In a small bowl mix the butter (keep it at room temperature for 10 mins before this)with the garlic, paprika (you can also use smoked if you like it, I am probably the only person on earth that does not like it), salt, pepper and some pepperoncini – or other chili flakes – as much as you prefer. I tend to taste the mixture and check if it is seasoned properly.
- Spread the mixture on the flesh of the mackerel and let it sit for 15-20 mins.
- Preheat the oven at 180C.
- Place the fish in a tray lined with parchment paper, skin side up, so the butter mixture is in direct contact with the baking sheet. Let it bake for 15-20 mins. Check the fish at the 10 mins mark to see how much time it needs until it is done.
And you are done! See, that was easy.


I love this recipe and you can serve it with cous cous, rice, mashed potatoes, roasted veggies, the possibilities are endless.
